1. Cut the peaches in half and carefully remove the pit. Place the peach, cut-side up on a piece of baking paper. Dust each with cinnamon; set aside
2. Mix together the oats, cinnamon, vanilla, oil and maple syrup in a bowl.
3. Divide the oat topping evenly over the peaches.
4. Add peaches on the baking paper to the air fryer basket and cook at 160C/320F for 15-20 minutes or until golden. Cooking at a low heat helps prevent the topping from browning too early*.
5. If desired, top servings with a scoop of ice cream or yoghurt.
