1. Preheat oven to 180C
2. Make cheesecake filling by whisking filling ingredients until smooth
3. Refridgerate filling whilst making cookie dough
4. Make cookie dough by mixing all cookie ingredients together in a bowl until a dough forms
5. Divide cookie dough into 8-10 balls and flatten
6. Scoop a 1-2 tbsp of filling into each piece of dough and gently work the dough around the filling until the filling is all covered
7. Place each ball of stuffed cookie dough onto a baking tray lined with grease-proof paper (ensure each dough ball is at least 5cm apart as the cookies will spread)
8. Bake for 10-12 minutes, turning your tray as necessary to ensure an even golden brown
9. Allow to cool for 10 minutes on the tray before removing and allowing to cool completely on a cooling rack
