Here's a great recipe by Sam Beasly that will bring you comfort and warmth into your mornings (or any time of the day!) A simple oat recipe that can be a great breakfast option or dessert, made with only a few ingredients.
INGREDIENTS
- 1 medium banana very ripe⠀
- 1/2 cup rolled oats
- 3 TBS vegan chocolate protein powder
- 1/2 tsp baking powder⠀
- 1 TBS coconut sugar
- 1 TBS cacao powder
- 1/2 cup plant milk⠀
- 1/2 tsp vanilla⠀
- Handful of dark choc chips to top
METHOD

Preheat your oven to 180 degrees and lightly grease a mini cast iron skillet with coconut oil.

Mash 1/2 of your banana with a fork in a small bowl (slice the rest for toppings), add your vanilla and plant milk and mix well. ⠀

Add the remaining ingredients and mix to form a batter.

Pour into your skillet, press two squares of chocolate in the centre, ensuring it’s covered by the oat mixture.

Then add chocolate chips and extra sliced banana. Cook in the oven for 30 minutes or until the top is slightly firm and golden.

Top with extra sweetener if desired.
