If super simple meals are your thing, you’re going to love this pesto. All you’ll need is 5 minutes and a food processor to whip up this vegan dinner!

INGREDIENTS
Pesto
- 60 g cashew nuts*
- 2 cup basil tightly packed
- 10 pitted green olives
- 2 tbsp savoury yeast flakes*
- 1/4 tbsp salt*
- 4-5 tbsp extra virgin olive oil*
- 2-3 tsp lemon juice
- 1-2 cloves garlic (optional but highly recommended)
- black pepper*
To Serve
- Your choice of cooked pasta (try our quinoa elbow twists for a gluten-free option)
- Fresh basil leaves to garnish
METHOD

1. Pulse all pesto ingredients until smooth.

2. Mix pesto and cooked pasta. Garnish, salt to taste and enjoy!
