Cafe Style White Chocolate Macadamia Cookies

Nothing says cafe-style like these white chocolate macadamia cookies. They are so delicious they will make you want to have more than one.

INGREDIENTS
- 1/4 Cup Sweetener
- 1/2 Cup Coconut Sugar*
- 1/3 Cup Organic Cold Pressed Coconut Oil*
- 1/4 Cup Almond Milk
- 1/2 Tsp Vanilla Extract
- 1 1/2 Cup Self Raising Flour
- 1/2 Tsp Aluminium Free Baking Powder*
- 1/4 Cup Raw Macadamias* Chopped
- 1/4 Cup Organic White Chocolate
METHOD

1. Add sweetener, sugar and oil to a bowl and whisk until smooth. Stir through almond milk and vanilla extract.

2. Sift in flour and baking Soda. Mix together until a dough firms and fold through chopped macadamias and white chocolate.

3. Cover and leave in the fridge for at least 1 hour. Overnight is ideal.

4. Preheat oven to 180°c.

5. Roll dough into balls and flatten slightly. Place on a baking tray a couple of centimetres spread apart and bake for 15 minutes.

6. Cookies will be soft when first taken out of the oven but will harden as they cool.
