Hot Chocolate Pancakes

This is one for all the pancake lovers out there – a pure indulgence.

INGREDIENTS
- 200 g self raising flour*
- 70 g coconut sugar*
- 30 g coconut oil*
- 250 g almond milk
- 1 Flax Egg Vegan Opt* 1 Tbsp flax meal + 3 Tbsp water
- 1 tsp apple cider vinegar*
- 50 squares dark chocolate*
METHOD

1. Make pancake batter by mixing all the ingredients (except chocolate) in a bowl until smooth

2. Preheat a non-stick fry pan on low flame and lightly grease with coconut oil

3. Place lightly greased cookie cutters onto the fry pan and spoon 1/2 tbsp of batter into each cutter – layer should be really thin

4. Add 4-5 squares of chocolate in the middle of each pancake before spooning more batter around the chocolate

5. Cook on a low heat with lid on for 3-4 minutes or until the base is golden brown

6. Carefully flip the pancakes and allow to cook for a further 2-3 minutes

7. Remove from the pan and gently remove the cookie cutter, enjoy!
