Rocket, Strawberry & Freekeh Salad

It's time to get your 'freek' on with this delicious Rocket, Strawberry & Freekeh Salad! This vibrant concoction by @sarahsspoonful is the perfect meal for this upcoming spring and will give you that extra kick of energy you need!
INGREDIENTS
Dressing
- 1 clove Garlic
- 1 tbsp Balsamic Vinegar*
- 1/2 tbsp Organic maple syrup*
- 3 tbsp Australian Cold Pressed Olive Oil*
Salad
- ½ cup Freekeh*
- ¼ cup Feta Cheese or Non-dairy feta cheese
- 2 tbsp Raw Pistachio Kernels*
- 2 cups Fresh Strawberries (Halved)
- 2 cups Rocket or Baby Spinach
- Salt & Pepper*
METHOD

1. Add the freekeh to a small pot with 1-1/4 cups water and a pinch of salt. Cover, bring to a boil, then turn down to simmer and cook for around 20 minutes, stirring occasionally.

2. Turn off the heat and allow to sit, covered, for five minutes. Meanwhile, slice the strawberries in half. Roughly chop the pistachios and crumble the feta.

3. Mince or crush the garlic into a small jar and combine with the other dressing ingredients. Put on the lid and shake to combine.

4. Once the freekeh has cooled slightly, combine the freekeh, strawberries, pistachios, feta and rocket/spinach. Drizzle over the dressing, stir to combine, and enjoy!
