Spice up your morning oats with this Vegan Pumpkin Apple Pie Baked Oatmeal!

INGREDIENTS
- 1 cup Pumpkin Puree
- 2 cups Organic Rolled Oats*
- 1/3 cup Almond Butter*
- 1 tbsp Pumpkin Spice or cinnamon*
- 1 tsp Baking Powder*
- 1 tsp Vanilla Extract
- 1/2 cup non-dairy milk
- 1 diced apple
- Peacans*
METHOD

1. Preheat the oven to 350F/160C (fan-forced)

2. In a large mixing bowl, combine the rolled oats, spices and baking powder.

3. Pour in the wet ingredients (pumpkin puree, almond milk, maple syrup and vanilla) and stir until well-combined.

4.Lastly, fold in the chopped apple.

5. Pour the mixture evenly into a 8×8 baking dish and sprinkle the top with pecans.

6. Place baking dish in oven for about 25-35 minutes or until ready

7. Remove oatmeal from oven and allow to cool for a few minutes before serving.
