Swirled Strawberry Cream Cake

A sweet and delicious cream cake, refined sugar free and perfect as an afternoon treat. Made using Naked Foods ingredients, by @emmswantston
INGREDIENTS
Strawberry Sauce
- 1 cup strawberries
- 1 tsp monk fruit sweetener*
- 1/2 tsp lemon juice
Cake
- 2 eggs or flax eggs
- 2 tbsp vanilla yoghurt or dairy free
- 2 tbsp almond milk
- 1 tbsp vanilla
- 1 cup almond meal*
- 1 tsp coconut flour*
- 1/4 cup monk fruit sweetener*
- 1 tsp baking powder*
- 1/2 tsp baking soda*
- 1 pinch salt*
Frosting
- 1 cup whipping cream or dairy free cream
- 1 tsp vanilla
- 1-2 tbsp monk fruit sweetener*
- 1 tbsp strawberry sauce
METHOD

1. Simmer sauce for 5-10 minutes, adding in strawberries gradually

2. Mix together cake ingredients and swirl in the sauce

3. Line bake tin and bake for 350'c for 20-30 minutes

4. Leave cake to cool before topping with cream and an extra swirl of strawberry sauce
