Dark Chocolate Strawberry Mud Cakes

A rich and decadent mud cake that is vegan and refined sugar free. Made using Naked Foods ingredients, by @emmswantston
INGREDIENTS
Cake
- 1 egg or flag egg
- 1 tsp vanilla
- 1 tbsp coconut oil*
- 1/2 cup vanilla almond milk
- 3/4 cup almond meal*
- 1 tbsp coconut flour*
- 1/4 cup cacao powder*
- 1/4 cup monk fruit sweetener* or coconut sugar
- 1 tsp instant espresso opt
- 1 tsp baking powder*
- 1 tsp baking soda*
- 1 pinch salt*
- 1/4 cup Dark Chocolate Freeze Dried Strawberries* finely chopped
- 1/4 cup dark chocolate chips*
Frosting
- 1 cup thick coconut cream
- 1 cup dark chocolate chips*
- 1 tsp instant espresso opt
- 1 tsp vanilla
- 1 pinch salt*
METHOD

1. Mix together mud cake ingredients until combined

2. Bake 350'c for 10-12 minutes

3. Leave to cool

4. For the frosting, heat cream together on the stove and start to pour in the chocolate chips until melted

5. Add in your espresso and vanilla and stir until ingredients are melted and smooth

6. Cool the frosting and slather on top of the mud cakes
