White Chocolate Gingerbread Biscoff Blondie
White chocolate desserts are so good, that you won't believe they're white chocolate—healthier, sugarless, gluten-free, and organic. You won't believe they taste like that sweet chocolate dessert you loved as a kid!

INGREDIENTS
- 150g light olive oil spread
- 220g organic coconut sugar*
- 1 large egg
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 250g unbleached bakers flour*
- 1/2 tsp bicarbonate soda*
- 1 tsp vanilla essence
- 150g white chocolate, roughly diced*
METHOD

1. Preheat oven to 180C

2. Beat olive oil spread, coconut sugar and an egg until light and fluffy

3. Fold in remaining ingredients, except chocolate chunks, until smooth

4. Add in chocolate chunks and mix until evenly distributed

5. Spread batter into a lined baking tin and bake for 30-35 minutes

6. Allow to cool completely before slicing
