Caramel Cheesecake Stuffed ANZAC Cookies

INGREDIENTS

Cookies

  • 200 g self raising flour*
  • 120 g coconut sugar*
  • 10 g cocoa powder*
  • 1/2 tsp baking soda*
  • 1 tsp baking powder*
  • 1/4 tsp salt*
  • 120 g olive oil spread or coconut oil*
  • 40 g golden syrup*
  • 50 g coconut shredded*
  • 60 g rolled oats*

Cheesecake Filling

  • 220 g cream cheese
  • 100 g rice malt syrup*
  • 1 pnch salt*

METHOD

  • 1. Preheat oven to 180C
  • 2. Make cheesecake filling by whisking filling ingredients until smooth
  • 3. Refridgerate filling whilst making cookie dough
  • 4. Make cookie dough by mixing all cookie ingredients together in a bowl until a dough forms
  • 5. Divide cookie dough into 8-10 balls and flatten
  • 6. Scoop a 1-2 tbsp of filling into each piece of dough and gently work the dough around the filling until the filling is all covered
  • 7. Place each ball of stuffed cookie dough onto a baking tray lined with grease-proof paper (ensure each dough ball is at least 5cm apart as the cookies will spread)
  • 8. Bake for 10-12 minutes, turning your tray as necessary to ensure an even golden brown
  • 9. Allow to cool for 10 minutes on the tray before removing and allowing to cool completely on a cooling rack

Here's a good one to try this week! Peanut Butter Here's a good one to try this week! Peanut Butter Raspberry balls 🥜✨

​PB is packed with loads of vitamins and is great source of protein and fibre. You can add it to almost anything - sweet or savoury! At NF, you can find freshly pressed PB made with nothing but peanuts - the best kind 😍 
​
Ingredients:
- 250g frozen raspberries, defrosted
- 200g dates* - soaked and drained
- 50g rice malt syrup*
- 30g peanut butter*
- 20g coconut oil*, melted
- 30g vanilla protein powder*
- 160g coconut flour*
- 70g shredded coconut*

Coating ingredients:
- 20g desiccated coconut*

Directions:
1. In a food processor, blend raspberries, dates, rice malt syrup, peanut butter and coconut oil until a smooth paste forms
2. Add remaining ingredients until a dough forms
3. Optional: form a small circle in each ball and drizzle some peanut butter inside before gently covering peanut butter with more dough and pinching the creases to seal the ball
4. Roll dough into desired size balls before rolling in desiccated coconut
