Caramel Cream Cheese Brookie Sandwich

If you love Brownies and Cookies, you'll love this BROOKIE! This delicious Carmel Cream Cheese Brookie Sandwich is the perfect indulgence, combining our dark chocolate and nut butter.

INGREDIENTS
Brookie
- 250g dark chocolate*
- 180g coconut oil*
- 150g coconut sugar*
- 150g raw brown sugar
- 70g cacao powder*
- 1.5 tsp baking powder*
- 200g self raising flour*
Cream Cheese Filling
- 250g cream ccheese (Vegan opt*)
- 30g rice malt syrup*r
METHOD

1. Preheat oven to 180C

2. Melt chocolate and butter in microwave for 60 seconds

3. Mix chocolate butter well until smooth

4. Add remaining ingredients until smooth

5. Spoon 1.5 tbsp batter onto a lined tray (make sure there is about 5cm between batter as Brookies expand)

6. Bake for 12-14 minutes

7. Allow to cool completely before filling

8. Make cream cheese filling by whisking cream cheese and rice malt syrup until light and fluffy

9. Make caramel but mixing peanut butter and rice malt syrup until smooth
-
10. Spoon filling onto half of the Brookies and make a well for the caramel

11. Spoon caramel in the middle of each brookie and sandwich with another brookie
