Chickpeas like you’ve never seen them before – these vegan, gluten-free cookies taste even better than they look!

Choc Chip Chickpea Flour Protein Cookies
Vegan, Dairy Free, Gluten Free, Refined Sugar Free
Makes 10 cookies.
Prep time: 5 minutes.
Cooking time: 6-8 minutes
Ingredients
Base
- 120g chickpea flour*
- 20g vanilla protein powder*
- 5g chia seeds*
- 70g natural sweetener powder*
- 1 heaped tsp ground cinnamon*
- 1/2 tsp baking powder*
- 1/2 tsp baking soda*
- 20ml almond milk (sub coconut milk for nut free)
- 60g vegan butter
- 50-100g vegan dark chocolate*, roughly diced

Method
- Pre-heat oven to 180C.

Blend all ingredients except almond milk, butter, and choc chunks in a blender until a fine powder
- Add butter and almond milk and stir until crumbs form. Use your hands to knead the dough until it’s lump-free.
- Roll dough into 10 balls before flattening and shaping with hands. Lay cookies on a tray lined with non-stick paper.
- Press choc chunks on top of cookies and bake for 6-8min (longer baking time = crunchier cookies and chewier cookies will be soft when first removed from oven)
- Allow to cool completely and enjoy!
