Two incredible flavours combined to create these sweet treats, these Chocolate Peanut Blondies are Vegan and Gluten-free.

INGREDIENTS
- 3/4 Cup Organic Coconut Sugar*
- 1/2 Cup Peanut Butter*
- 1/4 Cup Vegan Butter Melted
- 3/4 Cup Gluten Free Plain Flour*
- 1 Tbs Aluminium Free Baking Powder*
- 1/2 Tbs Bicarb Soda*
- 4 Tsp Egg Replacer Powder
- 3 Tbsp Plant-Based Milk
- 1/2 Cup Dark Chocolate Peanuts*
METHOD

1. Preheat the oven to 175C and line a large square brownie tin with baking paper.

2. Whip the sugar, butter and peanut butter with electric beaters until smooth. Whisk the milk and egg replacer powder separately, before whisking into the buttery mixture.

3. In a separate bowl, mix the flour, baking powder and bicarb. Add the wet mixture into the flour and slowly incorporate until a batter forms. If mixture is too thin, add a little extra flour. If it’s too thick, add another tablespoon of milk. The batter should be that of a thick cake batter.

4. Fold through the dark chocolate coated peanuts.

5. Scrape the batter into the lined tin and bake for 28 – 32 minutes, or until an inserted skewer comes out clean. Allow to cool in the tin for 15 minutes before cutting and serving. Best served fresh and warm!
