Coconut Caramel Bounty Slice

Raw, Gluten Free, Vegan, Dairy Free

Ingredients

Base

  • 1 cup of shredded coconut*
  • 1/2 cup of oats (use GF if required)*
  • 1/2 cup of rice malt syrup*
  • 1 tsp vanilla

Caramel

  • 3/4 cup medjool dates*
  • 1/4 cup rice malt syrup*
  • 1/2 cup almond butter*
  • Splash of water
  • 1 tsp vanilla

Method

  1. Blend the base ingredients in a high-speed food processor (if dry and crumbly add more syrup until sticky).
  2. Press into a lined baking tray and freeze
  3. Soak the dates in boiling water for 10 minutes, then drain.
  4. Add all the ingredients (except water) to the processor and blitz until well combined. Add the water and blitz again until smooth.
  5. Pour over the base and freeze for 3 hours.
