Cranberry & Roasted Cashew Energy Balls

If you're in the baking mood, try this incredible recipe by the amazing @geneschesser using @vitamix_aunz + so many NF goodies!
INGREDIENTS
- 1 cup roasted cashews*
- 1/2 cup dried cranberries*
- 6 medjool dates* pitted
- 2 tbsp rice malt syrup*
- 2 tsp almond butter*
- 1 tsp vanilla essence*
- 1 tbsp vegan vanilla protein*
- 1 tbsp flax meal
- 1/4 cup vegan white chocolate*
- 2 tbsp coconut oil*
METHOD

1. Using a blender add all the cashews and blend a grainy consistency. Be sure not to blend into nut butter.

2. Add in the remaining ingredients (except for the white chocolate and coconut oil) and blend for about 20 seconds, until the mixture can clump nicely together.

3. Line a baking tray or plate with baking paper.

4. Roll the mixture into your desired shape and place it on the tray.

5. Set in the fridge for about 5 minutes.

6. While the balls are setting, melt the white chocolate with coconut oil in the microwave or over the stovetop.

7. Once the balls have set, drizzle the white chocolate and coconut oil mixture over each ball.

8. Set in the fridge for a further 5 mins. Enjoy!
