A new twist on an old classic, this Creamy Tofu Mac will keep you wanting more without the guilt this season.

INGREDIENTS
- 4 Garlic Cloves Crushed
- 300 G Firm Tofu
- 3/4 – 1 Cup Water
- 1/4 Cup Savoury Yeast Flakes*
- 1/2 – 1 Tsp Organic Apple Cider Vinegar*
- 1/4 Tsp Organic Oregano*
- 1/4 Tsp Rosemary*
- 1/4 Tsp Thyme*
- Salt & Pepper To taste
- 250 G Quinoa Elbow Twist Pasta*
- 2 Handfuls Spinach Roughly chopped
METHOD

1. Blend all ingredients, garlic through thyme until smooth. Add salt and pepper, and adjust to taste. Set aside.

2. Cook the pasta until al dente – 5-7 minutes. Drain and tip back into the pot.

3. Stir through the chopped spinach until lightly wilted before pouring over the creamy sauce.
Stir thoroughly, serve, and enjoy!
