On their own, cookies and brownies are delicious. But when you put them together they are a match made in heaven! So make sure you try out this delicious cookie brownie recipe, you definitely won't regret it!

INGREDIENTS
Cookie
- 120 g Lite vegan butter
- 120 g Coconut sugar *
- 1 Egg
- 310 g Almond meal *
- 20 g Corn flour
- 1/2 tsp Baking soda *
- 1/2 tsp Salt *
- 120 g Dark chocolate chunks *
Brownie
- 70 g Lite vegan butter
- 180 g Coconut sugar *
- 1/2 tsp Salt *
- 60 g Cacao *
- 3 Eggs
- 150 g Almond meal *
- 1 tsp Baking powder *
METHOD

1. Reheat oven to 180°C. Make cookie layer by whisking butter, egg and sugar until smooth

2. Add remaining cooking ingredients and mix until well combined

3. Press cookie dough into a lined baking tin and freeze for 1-2 hrs

4. Make brownie by whisking butter, sugar and eggs until smooth

5. Add remaining brownie ingredients and mix until well combined

6. Spread brownie batter on top of cookie layer and bake for 50-55 mins (brownie will be slightly soft in the centre)

7. Allow to cool completely before freezing for 3-4 hours (can also leave in the fridge overnight until set)

8. Slice and store in the fridge/freezer. Best enjoyed microwaved for 30-60s and drizzled with peanut butter
