Marinated Sumac Tofu

Want to lift your dinner game? This Marinated Sumac Tofu recipe is full of healthy ingredients and is sure to be a dinner favourite in any household.

INGREDIENTS

  • 200 G Firm Tofu Pressed and cut into planks
  • 1 – 2 Tbsp Organic Tamari Sauce*
  • 1 Tbsp Sumac Powder
  • 1 1/2 Tbsp Minced Ginger
  • 1/2 – 1 Tbsp Chipotle Chilli Powder
  • 1 Tbsp Organic Rice Malt Syrup*

METHOD

  • 1. Whisk all the marinade ingredients together. Adjust to taste, add more sweetness if it isn't sweet enough or add more spice if it needs.
  • 2. Place the tofu in a shallow dish and pour over the marinade. Cover, refrigerate, and leave to marinate for at least 1 hour, turning the tofu over half way through to coat both sides.
  • 3. Heat a small frypan on a medium heat, and drizzle with extra virgin olive oil. Place the tofu planks into the pan, drizzle with some marinade, and allow to cook until golden on one side.
  • 4. Flip the tofu, drizzle with a little extra marinade, and cook until the second side is golden. Remove from the pan.
  • 5. Best served atop rice, steamed greens of your choice like broccoli, bok choy and beans. Season with crushed cashews and a final drizzle of marinade for some extra flavour.

​PB is packed with loads of vitamins and is great source of protein and fibre. You can add it to almost anything - sweet or savoury! At NF, you can find freshly pressed PB made with nothing but peanuts - the best kind 😍 
​
Ingredients:
- 250g frozen raspberries, defrosted
- 200g dates* - soaked and drained
- 50g rice malt syrup*
- 30g peanut butter*
- 20g coconut oil*, melted
- 30g vanilla protein powder*
- 160g coconut flour*
- 70g shredded coconut*

Coating ingredients:
- 20g desiccated coconut*

Directions:
1. In a food processor, blend raspberries, dates, rice malt syrup, peanut butter and coconut oil until a smooth paste forms
2. Add remaining ingredients until a dough forms
3. Optional: form a small circle in each ball and drizzle some peanut butter inside before gently covering peanut butter with more dough and pinching the creases to seal the ball
4. Roll dough into desired size balls before rolling in desiccated coconut
