Mini Chocolate Strawberry Pancakes

There's something about mini pancakes! Try this new breakfast recipe made using Naked Foods ingredients by @sarahsspoonful
INGREDIENTS
- 1 egg VGO
- 1/2 cup plain or wholemeal flour*
- 1/2 cup milk of choice
- 1 pnch cinnamon*
- 1/4 tsp baking powder*
- 3/4 punnet strawberries
- coconut oil* to cook
METHOD

1. Combine the egg, maple syrup and milk in a bowl and whisk with a fork. add the cinnamon, flour and baking powder and stir into a smooth batter.

2. Cut the strawberries into roughly 1cm slices.

3. Drop the strawberry slices into the pancake mixture and carefully turn them to coat in the batter.

4. Heat a frying pan to medium/low heat. add the butter or coconut oil. once melted, carefully remove the strawberries one by one from the batter, using a fork, and place into the pan.

5. Flip after a few minutes and cook the other side.

6. Serve and add your toppings! enjoy
