PB & J Coconut Slice

Raw, Gluten Free, Optionally Vegan & Dairy Free
Ingredients
Base:
- 2 cups blanched almond meal*
- 1 cup shredded coconut*
- 1/2 cup peanut butter*
- 1/3 cup honey* (or rice malt syrup*)
- 1 tsp vanilla essence
Raspberry “Jam”:
- 1 cup frozen raspberries
- 1-2 tbsp chia seeds*
- 1 tbs rice malt syrup*
Chocolate and PB Drizzle:
- 50 g dark chocolate*
- 1 tbsp peanut butter*

Method
Base:

Leave the honey aside and place all slice ingredients into a high-speed food processor and blend until combined.

Gradually add the honey, adding more until a sticky texture is achieved (not crumbly).

Once combined, press into a lined baking tray and place in the freezer.
Raspberry “Jam”:

Mash the raspberries until combined then add the rice malt syrup and chia seeds.

Sit for 10 minutes – the chia seeds will thicken the jam.

Spread over the base and freeze.
Chocolate and PB Drizzle:

Once the slice has set (usually takes 2 hours) melt down the chocolate, drizzle over the slice.

Drizzle the PB then cut into slices.

Serve frozen or allow to rest for 5 minutes for a chewy dessert!
