PB & J Coconut Slice

Ingredients

Base:

Raspberry “Jam”:

Chocolate and PB Drizzle:

Method

Base:

  1. Leave the honey aside and place all slice ingredients into a high-speed food processor and blend until combined.
  2. Gradually add the honey, adding more until a sticky texture is achieved (not crumbly).
  3. Once combined, press into a lined baking tray and place in the freezer.

Raspberry “Jam”:

  1.  Mash the raspberries until combined then add the rice malt syrup and chia seeds.
  2. Sit for 10 minutes – the chia seeds will thicken the jam.
  3. Spread over the base and freeze.

Chocolate and PB Drizzle:

  1. Once the slice has set (usually takes 2 hours) melt down the chocolate, drizzle over the slice.
  2. Drizzle the PB then cut into slices.
  3. Serve frozen or allow to rest for 5 minutes for a chewy dessert!
