Peanut & Choc Chip Cookies

Everyone deserves a sweet treat, and these delicious peanuts and Choc chip cookies will hit the spot with your morning or afternoon tea.

INGREDIENTS
- 1/4 Cup Vegan Butter Melted
- 1/2 Cup Smooth Peanut Butter*
- 2/3 Cup Coconut Sugar*
- 1 Tbsp Soy Milk (or any milk of choice)
- 1 Tsp Vanilla Essence
- 3/4 Cup Gluten free flour*
- 1/2 Tsp Aluminium Free Baking Powder*
- 1/2 Tbs Bicarb Soda*
- 2/3 Cup Dark Chocolate Buds*
- 1 Handful Peanuts*
METHOD

1. Preheat the oven to 175°C and line a large baking tray.

2. Whisk the butter and peanut butter together until smooth. Add in the sugar and combine, before gently stirring through the milk and vanilla essence.

3. In a separate bowl, combine the flour, baking powder and bicarb soda well. Pour the wet ingredients into the dry and fold through the wet ingredients with a spatula until just combined. If mix is too dry, add another tablespoon of milk.

4. Fold through the peanuts and chocolate buds.

5. Roll the dough into 14 – 16 balls and flatten slightly on the tray. Bake for 18 – 20 minutes or until golden and allow to rest for 10 minutes on the tray. Best eaten on the same day, but can be stored in an airtight container for a few days after!
