INGREDIENTS
Peanut Butter Filling
- 200 g peanut butter*
- 50 g rice malt syrup*
Cookie Ingredients
- 200 g self raising flour*
- 150 g coconut sugar*
- 30 g cocoa powder
- 1/2 tsp baking soda*
- 1 tsp baking powder*
- 1/4 tsp salt*
- 50 g lite vegan butter or coconut oil
- 40 g rice malt syrup*
- 100 g white chocolate* chunks
METHOD

1. In a bowl, mix peanut butter and rice malt syrup until well combined

2. Divide the peanut butter mixture between 10 mini ice cube trays and freeze until form
(around 3-4hrs)

3. Preheat oven to 180C

4. Make cookie dough by mixing all cookie ingredient (except white chocolate chunks) until a dough forms

5. Fold in chocolate chunks until evenly distributed

6. Divide the cookie dough into 10 balls and form a hole in each ball

7. Place an peanut butter filling Ice cube in each hole and gently mould the cookie dough around the filling until the filling is completely covered

8. Bake for 9-11 min (the cookies will naturally flatten in the oven) – bake for less time if you prefer softer cookies

9. Allow to cool on the tray for 10min before moving the cookies onto a cooling rack to cool completely
