Raspberry Nougat Bar

Its gooey, chocolatey and with a chewy nougat centre. What else could you possibly want? This delicious Raspberry Nougat Bar is the perfect treat when you relax with your afternoon cuppa.

INGREDIENTS
Nougat Base:
- 230 g Cashew Butter *
- 150 g Rice Malt *
- 250 g Almond Meal *
- 15 g Coconut Oil *
- Pinch Salt *
Raspberry Jam
- 300 g Raspberries
- 20-25 g Corn Starch
Chocolate Coating
- 400 g Chocolate *
METHOD

Make jam by blending raspberries, rice malt and corn starch until smooth

1. Microwave jam for 30sec 4-5 times, mixing between intervals (jam should be translucent and should stick to the back of a spoon like a puree)

2. Allow jam to cool whilst making nougat

3. To make nougat, mix all base ingredients until a dough forms

4. Press dough into a lined baking tray and spread jam on top

5. Allow to set in freezer for 2 hrs before slicing and returning bars to freezer until bars are solid

6. Melt chocolate in a microwave safe bowl until smooth

7. Dip bars into chocolate before placing on a lined tray and refrigerating until chocolate is solid
