Tropical Coconut Slice

Nut Free, Vegan, Dairy Free, Gluten Free, Refined Sugar Free

Makes 12 slices.
Prep time: 30 minutes.
Cooking time: 5 minutes.
Freezing time: 2 hours. 

Ingredients

Base ingredients:

  • 250g dates*, soaked in hot water for 15min and then drained
  • 45g coconut cream, chilled (white part only)
  • 15g lemon juice
  • 30g unhulled tahini*
  • 10g rice malt syrup*
  • 45g shredded coconut*
  • 50g desiccated coconut*
  • 60g coconut flour*
  • 1/2 tsp vanilla powder*
  • 20g flax meal (grind flax seeds* with a coffee grinder or mortar and pestle)

Coconut layer Ingredients:

  • 120g coconut cream, chilled (white part only)
  • 30g lemon juice
  • 60g rice malt syrup*
  • 20g coconut oil*, melted
  • 100g shredded coconut*
  • 40g coconut flour*
  • 40g desiccated coconut*

Passionfruit layer ingredients:

  • 100g coconut cream
  • 50g passionfruit pulp
  • 5g custard powder (or cornstarch)
  • pinch of turmeric* (for colour)

        Method

        1. Base: blend dates, coconut cream, lemon juice, tahini and rice malt syrup until smooth. Add remaining ingredients and mix until a dough forms. Press dough into lined baking tin and freeze whilst making coconut layer.

        2. Coconut layer: Mix all ingredients until a dough forms and press coconut layer on top of base layer. Freeze whilst making passionfruit layer.

        3. Passionfruit layer: In a pan, combine all Passionfruit layer ingredients until smooth and heat on medium-low heat for 2 min whilst stirring continuously. Increase heat until boiling and continue stirring for 2-3 min until mixture thickens. Once slightly thicker, pour over coconut layer and freeze for 1-2hrs or until firm.

        4. Remove from freezer and slice. Enjoy! To store, keep in an air tight container in the fridge
