Vegan No Bake Pecan Bites

Deliciously buttery shortbread with gooey almond butter and crushed pecans. Vegan, no bake, date free and easy to make!

INGREDIENTS
Shortbread Base
- 1/4 cup coconut flour
- 2 tbsp coconut oil*
- 2 tbsp maple syrup*
- 1/2 tsp vanilla
- 1 pinch salt*
Caramel Filling
- 1/4 cup almond butter*
- 2 tbsp coconut oil*
- 2 tbsp maple syrup*
- 1/2 tsp vanilla
- 1/4 tsp cinnamon*
Topping
- 1/4 cup pecans
METHOD

1. Fill a mini muffin tray with paper cases and set aside

2. Place all ingredients for the base into a small bowl and stir until well combined.

3. Press shortbread base into your prepared muffin tray and use your fingers or the back of a spoon to press down and smooth up the edges.

4. Use your thumb (or any finger/utensil you like) to press an indent into the centre for your caramel filling to sit

5. Place all ingredients for your caramel filling into your bowl and stir until smooth, creamy and well combined.

7. Spoon/pour your salted caramel filling into your shortbread crust.

8. Top with pecans, if you want then place in the freezer to set – should be ready in 10-15 minutes depending on size

Best stored in an airtight container in the fridge (can also be frozen)
