Red Velvet Cheesecake White Chocolate Stuffed Cookies

Sweet cheesecake combined with gooey white chocolate cookies – the perfect pairing. These cookies are vegan, refined-sugar free and delicious.

INGREDIENTS

Cookie Ingredients

  • 200 g self raising flour*
  • 120 g coconut sugar*
  • 10 g cocoa powder*
  • 1/2 tsp baking soda*
  • 1 tsp baking powder*
  • 1/4 tsp salt*
  • 100 g vegan butter
  • 20 g rice malt syrup*
  • 12 drops red food colouring
  • 100 g white chocolate (dairy free)

Cream Cheese Filling

  • 250 g vegan cream cheese
  • 70 g rice malt syrup*

METHOD

  • 1. Mix cream cheese and rice malt syrup until smooth
  • 2. Refridgerate cream cheese mixture for at least 1 hour
  • 3. Preheat oven to 180c
  • 4. Make cookie dough by mixing all cookie ingredients
  • 5. Fold in white chocolate chips until evenly distributed
  • 6. Divide dough into 8 balls and make a well in each ball for the cream cheese filling
  • 7. Spoon 1-1.5 tbsp cream cheese mixture into each dough ball and gently mould dough around the filling
  • 8. Place cookie dough onto a lined baking tray, 5-8cm apart (no need to flatten dough balls as they will flatten when baked)
  • 9. Bake for 10-12min and allow to cool for 10min before moving the cookies onto a cooling rack to cool completely

​PB is packed with loads of vitamins and is great source of protein and fibre. You can add it to almost anything - sweet or savoury! At NF, you can find freshly pressed PB made with nothing but peanuts - the best kind 😍

Ingredients:
- 250g frozen raspberries, defrosted
- 200g dates* - soaked and drained
- 50g rice malt syrup*
- 30g peanut butter*
- 20g coconut oil*, melted
- 30g vanilla protein powder*
- 160g coconut flour*
- 70g shredded coconut*

Coating ingredients:
- 20g desiccated coconut*

Directions:
1. In a food processor, blend raspberries, dates, rice malt syrup, peanut butter and coconut oil until a smooth paste forms
2. Add remaining ingredients until a dough forms
3. Optional: form a small circle in each ball and drizzle some peanut butter inside before gently covering peanut butter with more dough and pinching the creases to seal the ball
4. Roll dough into desired size balls before rolling in desiccated coconut
