Zucchini Oatmeal

Oatmeal is without a doubt a breakfast classic. So why not make things interesting and add Zucchini? Start your day right by trying this new yummy recipe created by @sarahsspoonful and give yourself that extra kick of energy you need!
INGREDIENTS
- 1/2 Small Zucchini
- 1/2 cup Porridge Blend* or rolled oats*
- 1 pinch Cinnamon*
- 1/2 cup Plant-based milk of choice
- 1 scoop Vanilla protein powder*
- 1 cup Toppings of choice (fresh fruit, dried fruit *, hemp seeds *, cacao nibs*)
METHOD

1. Grate the zucchini and add it to a pot with the oats, roughly three cups of water and the cinnamon. Simmer for about ten minutes.

2. Add half a cup of oat milk to the pot towards the end of the ten minutes for creaminess and cook for a further minute or two.

3. Take off the heat and add the protein powder, then stir to combine.

4. Add to a bowl along with your choice of toppings!
