Granola is a cereal made from nuts and seeds, sometimes with fruit. It is common in paleo and is part of a high-fiber diet. Sounds pretty Vegan already, right? The trick is that granola is often sweetened with honey or other sticky-sweet substances, which may contain many carbohydrates, making it non-vegan and unhealthy. Honey has a high viscosity and works well as a binder. However, vegans avoid honey because it comes from bees—the extraction method may harm bees or destroy their habitat.

Instead of using honey, we use 100% organic coconut syrup as our binding ingredient. Coconut syrup is one of the best alternatives because its low glycemic index helps lower blood sugar levels. Vegan Granola with Peanut Butter and strawberries

Ingredients:
– 2 1/2 Cups Vegan granola
– 6 tbsp organic peanut butter or tahini butter/paste
– 50grs of strawberries
– Chia seeds
Organic cacao nibs
Sunflower seeds
– Plant based milk of choice or plant based yoghurt of choice

Mix all the ingredients in a cold bowl and enjoy!!

10 minute Veganola Simple Overnight Chia Pudding

Ingredients:
– 2 cups almond milk (coconut works best – but any is fine)
– 3tbsp maple syrup* (optional)
– 1 tsp vanilla powder* (or vanilla extract)
– 6 tbsp chia seeds*

Flavoring:
– 2 tbsp cacao* (or cacao*)
– OR 1 tsp mermaid latte*
– OR 1 tsp red velvet latte*

Toppings:
– Seasonal fruit
Vegan granola
– Yoghurt (dairy-free option: coconut yogurt)
Nut butter – optional (we love cashew or almond)*

Pour all the ingredients into a large jar and shake well.

Place in the fridge for at least 12 hours (24 is even better). Stir well before serving, then top with your favorite toppings. Put leftovers into smaller jars, then pack them straight into lunchboxes. Keep in the fridge for up to one week (depending on how fresh the milk is!).
